Production of honey

The very production of honey is process of a few steps that have to be followed through properly and in the right timing, otherwise the quality of the final product might be compromised.

„Today’s business should not be left for tomorrow“ is a famous proverb, which proved to be true, especially in beekeeping, i.e. apiculture business.

During the whole period of bees collecting the nectar, our hives are being observed and depending on our needs bee spawning is either encouraged or prevented!

In Montenegrin upland area, where the climate conditions can be tricky bringing heavy rain falls and snow, it is of the upmost significance for each of our bees to be strong, for it allows them to collect the optimal amount of nectar.

The time to extract honey from hives depends on numerous factors. Harvests are normally possible during and shortly after the two main flowering seasons, namely October/November and February-June. The right time is usually determined when at least 70% of honeycomb is covered in bee wax plugs, that is, when more than half of the honey cells on both the sides are sealed with wax.

The next step would be to remove the bees. The best way, while shaking the honey comb, is to use some sort of cloth, so the bees don’t get hurt. The remains of honey should be picked up with a soft comb. The above procedure, unlike some chemical or smoking procedures, ensures the bees and the honey rest healthy and pure.

Afterwards, the collected honey combs undergo a process of honey production in extremly sanitary conditions. We use hands to produce centrifugal force, while no heating whatsoever is allowed, thus the quality of honey is not compromised.

The honey is then placed in Rostfrei vessels, hermetically closed and pressurized, which to a certain extent guarantees the dirt and filth will stay out.

As far as packing is concerned, it depends on the wish of our custemers whether they want their honey in plastic or glass jars, nevertheless, any vessel for packing honey must be very clean.
